Designed in the traditional Kansai style, its shape resembles a slender willow leaf (hence the name "Yanagi"). It is an indispensable tool for every professional sushi chef and ambitious Asian cuisine enthusiast, created by the renowned Japanese manufacturer Yoshikin – the same producer behind the global success of the Global knives brand.
Thanks to its exceptionally long and narrow blade, the knife allows for a single, fluid stroke from the heel to the very tip of the blade. This cutting technique eliminates tearing or sawing the meat. The cellular structure of delicate fish (such as salmon or tuna) remains intact, guaranteeing full flavor, juiciness, and an impeccable visual presentation of the dish.
Key features of the Bunmei Yanagi knife:
- Authentic single-bevel grind (Kataba): Traditional Japanese right-handed sharpening achieves extreme, almost surgical sharpness at a very small angle. It also causes the cut fish slices to smoothly detach from the blade and fall to the side.
- Advanced molybdenum-vanadium steel: The use of high-carbon alloy guarantees high corrosion resistance, crack resistance, and long-lasting excellent working sharpness while maintaining ease of re-sharpening.

How to care for a traditional Japanese knife?
Kitchen equipment of this class requires proper care. The knife should be washed only by hand with a soft sponge using a mild dish soap, and immediately wiped dry after washing. Storing in a dishwasher is strictly prohibited, as aggressive chemicals damage the structure of the magnolia wood and dull the blade. For regular sharpening, we recommend a professional Japanese King waterstone with 1000 grit.
