The Japanese Satake Sword Smith knife with a blade length of 21 cm is a traditional Yanagi-Sashimi type tool, specially designed for precise slicing of raw fish fillets, seafood, and delicate meats. Since 1947, the Satake Cutlery manufacture has combined the centuries-old legacy of blacksmiths from Seki – the Japanese capital of blades – with the latest metallurgical technologies.
Thanks to its slender, long, and rigid willow leaf-shaped blade, the knife allows food to be sliced with a single, decisive pull towards oneself. This prevents the delicate fish fibers from being mechanically crushed or torn, preserving their full juiciness, deep flavor, and impeccable, professional presentation on the plate.

Usage and maintenance tips:
To ensure the knife retains its properties for many years, wash it by hand only, using a soft sponge and mild dish soap. After each wash, wipe the blade and handle dry. Absolutely avoid washing the knife in dishwashers. Remember not to use a Yanagi knife for cutting bones, frozen food, or very hard vegetables. To maintain impeccable sharpness, we recommend regular use of Japanese whetstones with a grit of 1000 or higher.
