The straw mushroom, also known as volvariella volvacea, is a very popular Asian mushroom. It is cultivated in the humid and hot climate of Southeast Asia. It can be said that, after the button mushroom and shiitake, it is the third most commonly consumed mushroom in the world. Young, "unopened" mushrooms are harvested, hence the name volvariella volvacea (pochwiaki in Polish, referring to a sheath), and when bitten into, a very tasty juice is released. They are ideal for salads, wok dishes, or pasta dishes. They are suggested for Tom Yum soups.
